Nutrire il corpo, raccontare la cultura:dieta mediterranea e fast food a confronto

Abstract

Il tema centrale riguarda lo stretto legame che ciascuna cultura mondiale ha con la propria tradizione alimentare. In particolare, da una parte vengono analizzati il modello alimentare italiano, la sua lunga tradizione culinaria: il riconoscimento da parte dell'Unesco della dieta mediterranea, l'uso del pasto come momento di festeggiamento (come accade ad esempio nel caso delle sagre o delle feste religiose), la nascita delle narrazioni sull'italianità fino alle implicazioni moderne di questo tipo di racconto, con Slow food, diete in voga e utilizzo politico; dall'altro il modello alimentare statunitense, nato dalla fusione di molte cucine differenti, caratterizzano da scelte alimentari spesso poco salutari e contraddistinto dalla presenza dei fast food. Infine i due modelli vengono messi a confronto sia per quello che riguarda la presenza della cucina italiana in america,sia relativamente alla presenza in Italia dello slow food che si contrappone al fast food statunitense, sia per quanto concerne la gestione del pasto stesso. Finally, the two models are compared both in terms of the presence of Italian cuisine in America, and in terms of the presence in Italy of slow food as opposed to American fast food, and in terms of the management of the meal itself.

The central theme concerns the close link that each world culture has with its own food tradition. In particular, on the one hand, the Italian food model is analyzed, its long culinary tradition: the recognition by UNESCO of the Mediterranean diet, the use of the meal as a moment of celebration (as happens for example in the case of festivals or religious festivals), the birth of narratives on Italianness up to the modern implications of this type of story, with Slow food, diets in vogue and political use; on the other hand, the American food model, born from the fusion of many different cuisines, characterized by often unhealthy food choices and characterized by the presence of fast food.
